Prawn Saganaki

for this week Dodoni Creations we thought it would be great to cook Prawn Saganaki. It may look it’s hard to cook, but wow is it easy! A great dish for both family dinners and functions! The mix between prawn, feta and tomato sauce work so beautifully together. Pretty much it’s a match made in heaven! Have a go at it! You’ll surprise yourself!

Instructions

  • Preheat oven to 180°C. Heat a non-stick frying pan over medium heat. Spray with oil. Cook onion, stirring, for 3 minutes or until soft.

  • Add the garlic and cook, stirring, for 1 minute or until its smells delicious. Then add the tomato paste and cook and cook for 1 minute.

  • Add a splash of wine and proceed to simmer for about 2 minutes or until its reduced by half. Add the fresh tomato and simmer for 10 minutes or until the mixture is thick.

  • Spread the tomato mixture over the base in a oven proof dish. Place the prawns and feta on top and spread evenly. Bake for 10 minutes or until cooked through.

  • Serve it up and top it parsley and a pinch of chilli if you want to spice it up!

Ingredients

  • Olive oil spray
  • A pinch of Chilli
  • 1 onion, halved, thinly sliced
  • 3 garlic cloves, thinly sliced
  • 2 tablespoons no-added-salt tomato paste
  • 1/2 cup of white wine
  • 400g can chopped tomatoes
  • 400g green prawns, peeled leaving tails intact
  • 75g reduced-fat Dodoni Greek feta, crumbled
  • 2 tablespoons chopped fresh parsley
  • A Crusty loaf of bread
