Salad of Watermelon, Feta, Almonds, Mint & Rose Syrup
Ingredients
- 200g DODONI Feta
- 1 cup castor sugar
- 1 cup rosewater syrup (see note below)
- 1/4 seedless watermelon
- 1/2 toasted flaked almonds
- 1/4 bunch mint
Preparation
- In a saucepan, reduce castor sugar and rosewater until it starts to thicken slightly. Chill.
- Remove skin from watermelon and cut into large chunks. Arrange on a plate and scatter with almonds, crumbled DODONI Feta and pickled mint leaves.
- Drizzle with rosewater syrup
NOTE: Rosewater syrup can be found in all good Middle Eastern delis.
