Salad of Watermelon, Feta, Almonds, Mint & Rose Syrup

Ingredients

  • 200g DODONI Feta
  • 1 cup castor sugar
  • 1 cup rosewater syrup (see note below)
  • 1/4 seedless watermelon
  • 1/2 toasted flaked almonds
  • 1/4 bunch mint

Preparation

  • In a saucepan, reduce castor sugar and rosewater until it starts to thicken slightly. Chill.
  • Remove skin from watermelon and cut into large chunks. Arrange on a plate and scatter with almonds, crumbled DODONI Feta and pickled mint leaves.
  • Drizzle with rosewater syrup

NOTE: Rosewater syrup can be found in all good Middle Eastern delis.
